Ingredients
  • 300 gram Eggplant
  • 200 gram Zucchini
  • 200 gram Bell pepper
  • 100 gram Red onion
  • 150 gram Cherry tomatoes
  • 2 teaspoon Capers
  • 2 teaspoon Olives
  • 2 teaspoon Balsamic vinegar
  • 2 teaspoon Honey
  • 4 teaspoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 teaspoon Fresh basil leaves
Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Cut the eggplant, zucchini, bell pepper, and red onion into small cubes.
  3. Place the vegetables on a baking sheet, drizzle with olive oil, salt, and black pepper.
  4. Roast in the preheated oven for 20 minutes or until the vegetables are tender.
  5. In a saucepan, combine the cherry tomatoes, capers, olives, balsamic vinegar, honey, salt, and black pepper. Simmer for 5 minutes.
  6. Remove the roasted vegetables from the oven and mix them with the tomato sauce.
  7. Serve the Sweet-and-Sour Vegetable Caponatina with fresh basil leaves on top.
