The vibrant orange color of butternut squash is due to its high beta-carotene content, which is converted into vitamin A in the body.

Peel and dice the butternut squash, carrots, red bell pepper, onion, and garlic cloves.

In a large pot, heat some oil over medium heat and add the diced vegetables. Sauté for 5 minutes.

Add the vegetable broth, coconut milk, curry powder, ground cumin, salt, and black pepper to the pot. Bring to a boil.

Reduce the heat to low and let the soup simmer for 20 minutes, or until the vegetables are tender.

Use an immersion blender or a regular blender to puree the soup until smooth.

Serve the soup hot, garnished with fresh cilantro.
