  2. Add garlic and ginger, and stir-fry for 1 minute.
  3. Add potato and stir-fry for 5 minutes, until slightly golden.
  4. Add Brussels sprouts and seitan, and stir-fry for another 5 minutes.
  5. Add mushrooms and continue stir-frying for 3-4 minutes, until vegetables are tender.
  6. Season with soy sauce, salt, and black pepper.
  7. Stir well to combine and cook for an additional 2 minutes.
  8. Remove from heat and serve hot.
