  • 1 can Canned mixed beans
  • 1 cup Cherry tomatoes
  • 1 cup Cucumber
  • 1 small Red onion
  • 1 cup Bell pepper
  • 2 tablespoon Fresh parsley
  • 2 tablespoon Fresh lemon juice
  • 2 tablespoon Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Rinse and drain the canned mixed beans.
  2. Chop the cherry tomatoes, cucumber, red onion, bell pepper, and fresh parsley.
  3. In a large bowl, combine the beans, cherry tomatoes, cucumber, red onion, bell pepper, and parsley.
  4. In a small bowl, whisk together the fresh lemon juice, extra virgin olive oil, salt, and black pepper.
  5. Pour the dressing over the bean mixture and toss to coat.
  6. Cover the bowl and let the salad rest in the refrigerator for at least 30 minutes.
  7. Serve chilled and enjoy!
