Ingredients
  • 2 cup Corn kernels
  • 1 cup Lima beans
  • 1 cup Red bell pepper
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
  • 1 teaspoon Fresh thyme
  • 1 tablespoon Lemon juice
Instructions
  1. In a large pot of boiling water, cook the corn kernels and lima beans for 5 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the onion and red bell pepper and cook until softened, about 5 minutes.
  3. Add the garlic and cook for an additional minute.
  4. Add the cooked corn, lima beans, salt, black pepper, parsley, thyme, and lemon juice to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Remove from heat and let rest for 5 minutes before serving.
  6. Serve hot as a side dish.
