  • 1.5 cup Oats
  • 0.5 cup Almond flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Salt
  • 2 mashed Ripe bananas
  • 0.25 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Fresh strawberries
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, almond flour, baking powder, cinnamon, and salt.
  3. In a separate bowl, mash the ripe bananas until smooth. Add maple syrup and vanilla extract, and mix well.
  4. Pour the banana mixture into the dry ingredients and stir until well combined.
  5. Gently fold in the fresh strawberries.
  6. Using a cookie scoop or spoon, drop spoonfuls of the cookie dough onto the prepared baking sheet.
  7. Bake for 15 minutes or until the edges are golden brown.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  9. Transfer the cookies to a wire rack to cool completely before serving.
