Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic, and sauté until golden brown.

Add sliced zucchini and cook for 5 minutes, stirring occasionally.

Add rice, vegetable broth, tomato paste, paprika, cumin, salt, and black pepper.

Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked and liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Garnish with fresh parsley and serve hot.
