Ingredients
  • 2 cup Red Kidney Beans
  • 1 cup Coconut Milk
  • 1 medium Onion
  • 2 clove Garlic
  • 2 sprig Thyme
  • 1 medium Red Bell Pepper
  • 2 medium Tomato
  • 1 whole Scotch Bonnet Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cumin
  • 2 tablespoon Vegetable Oil
  • 2 cup Water
Instructions
  1. In a large pot, heat vegetable oil over medium heat. Add onion, garlic, thyme, and red bell pepper. Cook until softened.
  2. Add tomato, scotch bonnet pepper, salt, black pepper, and cumin. Cook for 2 minutes.
  3. Add red kidney beans, coconut milk, and water. Bring to a boil, then reduce heat and simmer for 1 hour.
  4. Remove scotch bonnet pepper and thyme sprigs before serving.
  5. Serve hot with rice or tortillas.
