Cook quinoa according to package instructions. Let it cool.

Chop cucumber, cherry tomatoes, red bell pepper, red onion, fresh parsley, and fresh mint.

In a large bowl, combine cooked quinoa, chopped vegetables, fresh herbs, lemon juice, olive oil, salt, and black pepper.
