  2. Chop cucumber, cherry tomatoes, red bell pepper, red onion, fresh parsley, and fresh mint.
  3. In a large bowl, combine cooked quinoa, chopped vegetables, fresh herbs, lemon juice, olive oil, salt, and black pepper.
  4. Toss everything together until well mixed.
  5. Serve chilled and enjoy!
