Ingredients
  • 2 cup Split peas
  • 6 cups Vegetable broth
  • 1 medium Onion
  • 2 medium Carrots
  • 2 stalks Celery
  • 2 cloves Garlic
  • 2 piece Bay leaves
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 cups Water
Instructions
  1. Rinse the split peas under cold water.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, carrots, celery, and garlic. Cook until vegetables are tender.
  4. Add split peas, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 1 hour or until split peas are soft.
  6. Remove bay leaves and use an immersion blender to blend the soup until smooth.
  7. Serve hot and enjoy!
