Preheat the oven to 200°C (400°F).

In a pan, heat 1 tablespoon of olive oil and sauté the chopped onion and minced garlic until softened.

In a bowl, mix the flaxseed meal and water. Let it sit for 5 minutes to form a gel-like mixture.

In a large mixing bowl, combine the cooked onion and garlic, spinach, breadcrumbs, flaxseed mixture, salt, and black pepper. Mix well.

Shape the mixture into small nugget shapes and place them on a baking sheet lined with parchment paper.

Brush the nuggets with olive oil and bake for 15 minutes, or until golden brown.

Remove from the oven and let them rest for 5 minutes before serving.
