Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and cook until onion is translucent.

Add red lentils and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.

Stir in spinach and cook for an additional 5 minutes, until wilted.

Remove the pot from heat and squeeze in the juice of one lemon. Season with salt and black pepper.

Allow the soup to rest for 5 minutes before serving.
