  1. Rinse the lentils and soak them in water for 30 minutes.
  2. Heat oil in a pan and sauté the onions, garlic, ginger, and green chili until golden brown.
  3. Add the tomatoes and cook until they turn soft.
  4. Add the turmeric powder, cumin powder, coriander powder, and garam masala. Mix well.
  5. Drain the soaked lentils and add them to the pan. Stir well.
  6. Add water and salt. Bring to a boil and then simmer for 20 minutes.
  7. Add the spinach and cook for another 5 minutes.
  8. Serve hot with rice or bread.
