Ingredients
  • 200 gram Spinach
  • 1 cup Rice
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 2 cup Vegetable broth
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and minced garlic cloves. Saute until onion becomes translucent.
  3. Add rice and stir for a minute.
  4. Pour vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  5. Add spinach, lemon juice, salt, and black pepper. Stir well.
  6. Cover and cook for an additional 5 minutes until the spinach wilts.
  7. Remove from heat and let it rest for 5 minutes.
  8. Fluff the rice with a fork before serving.
