Ingredients
  • 200 gram Spinach
  • 200 gram Peas
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh cilantro
Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until onion is translucent.
  2. Add spinach and peas, and cook for 5 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Season with salt and black pepper.
  5. Remove from heat and let it cool slightly.
  6. Blend the soup until smooth using an immersion blender or a regular blender.
  7. Return the soup to the pot and reheat if necessary.
  8. Stir in lemon juice.
  9. Serve hot, garnished with fresh cilantro.
