Ingredients
  • 4 pieces Bell Peppers
  • 1 cup Quinoa
  • 1 cup Black Beans
  • 1 cup Corn
  • 1 medium Onion
  • 2 clove Garlic
  • 1 pepper Jalapeno
  • 1 medium Tomato
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Olive Oil
  • 2 tablespoon Cilantro
  • 4 wedge Lime
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine cooked quinoa, black beans, corn, onion, garlic, jalapeno, tomato, cumin, chili powder, paprika, salt, pepper, and 1 tablespoon of olive oil.
  4. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  5. Drizzle the remaining olive oil over the stuffed peppers.
  6. Bake for 30-35 minutes, or until the peppers are tender and the filling is heated through.
  7. Remove from the oven and let them rest for 10 minutes.
  8. Garnish with cilantro and serve with lime wedges.
