Cut the tofu into cubes and blanch the spinach.

Heat vegetable oil in a wok and fry garlic, ginger, and Sichuan peppercorns until fragrant.

Add chili bean paste and stir-fry for a minute.

Add tofu, soy sauce, and cornstarch mixture. Stir-fry until the sauce thickens.

Add blanched spinach and water. Cook for another 2 minutes.
