In a food processor, combine chickpeas, carrot, red bell pepper, green onion, cilantro, garlic cloves, ginger, peanut butter, soy sauce, lime juice, red curry paste, cumin, salt, and black pepper. Pulse until well combined but still slightly chunky.

Transfer the mixture to a bowl and stir in breadcrumbs. Let it rest for 5 minutes.

Divide the mixture into 4 equal portions and shape each portion into a patty.

Heat a grill or a pan over medium heat and cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
