Cut the eggplant into bite-sized pieces.

Slice the red bell pepper, onion, garlic, and Thai chili.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add garlic and Thai chili, stir-fry for 30 seconds.

Add onion and red bell pepper, stir-fry for 2 minutes.

Add eggplant, soy sauce, oyster sauce, and sugar. Stir-fry for 5-7 minutes until the eggplant is cooked.

Add basil leaves and spring onion, stir-fry for another minute.

Squeeze lime juice over the dish before serving.
