Ingredients
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 can Tomatoes
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Red bell pepper
  • 1 pepper Jalapeno pepper
  • 4 cup Vegetable broth
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 wedge Lime
  • 4 tablespoon Fresh cilantro
  • 1 medium Avocado
Instructions
  1. In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, diced red bell pepper, and jalapeno pepper. Cook until vegetables are softened.
  2. Add cumin powder, chili powder, salt, and black pepper. Stir well.
  3. Pour in vegetable broth, black beans, corn kernels, and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. While the soup is simmering, prepare the toppings. Slice the avocado and squeeze lime juice over it. Chop fresh cilantro.
  5. Serve the soup hot, topped with sliced avocado, fresh cilantro, and a lime wedge on the side.
