  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 medium Red bell pepper
  • 1 small Red onion
  • 1 small Jalapeno pepper
  • 1 bunch Cilantro
  • 2 tablespoon Lime juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Rinse and drain the black beans and corn kernels.
  2. Finely chop the red bell pepper, red onion, jalapeno pepper, and cilantro.
  3. In a large bowl, combine the black beans, corn kernels, red bell pepper, red onion, jalapeno pepper, and cilantro.
  4. In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and black pepper.
  5. Pour the dressing over the salad and toss until well coated.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
