  1. Peel and dice the potatoes.
  2. Heat olive oil in a large pot and add chopped onions. Cook until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add diced potatoes, vegetable stock, red chili powder, cumin powder, coriander powder, salt, and black pepper powder.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.
  6. Use an immersion blender to blend the soup until smooth.
  7. Stir in fresh coriander and lemon juice.
  8. Serve hot and garnish with additional fresh coriander if desired.
