  1. Rinse the red lentils under cold water.
  2. In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
  3. Add the curry powder, turmeric powder, cayenne pepper, and cumin powder. Stir well to coat the onions and spices.
  4. Add the rinsed red lentils, vegetable broth, coconut milk, and tomato paste. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for about 25 minutes, or until the lentils are tender.
  6. While the stew is simmering, toast the cashew nuts in a dry skillet over medium heat until lightly browned. Remove from heat and set aside.
  7. Once the lentils are cooked, stir in the lemon juice, salt, and black pepper.
  8. Serve the spicy curried lentil stew hot, garnished with toasted cashew nuts and fresh cilantro.
