Tagine is a traditional Moroccan dish named after the earthenware pot in which it is cooked.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 65 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 16.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.

Add diced tomatoes, sliced red bell pepper, and sliced carrots. Cook for 5 minutes.

Add chickpeas, vegetable broth, ground cumin, ground coriander, paprika, cayenne pepper, salt, and black pepper. Stir well.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30 minutes.

Remove from heat and let it rest for 10 minutes.

Stir in fresh cilantro and lemon juice.

Serve hot with couscous or rice.
