  • 2 piece Avocado
  • 1 cup Cucumber
  • 1 cup Tomato
  • 1/4 cup Red Onion
  • 1 piece Jalapeno Pepper
  • 2 piece Garlic Clove
  • 2 tablespoon Lime Juice
  • 1/2 cup Cilantro
  • 1/4 cup Vegetable Broth
  • 2 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
Instructions
  1. In a blender, combine avocado, cucumber, tomato, red onion, jalapeno pepper, garlic cloves, lime juice, cilantro, vegetable broth, olive oil, salt, and black pepper.
  2. Blend until smooth.
  3. Transfer the mixture to a bowl and refrigerate for at least 2 hours.
  4. Serve chilled and garnish with additional cilantro if desired.
