  1. Rinse the red lentils and set aside.
  2. In a large pot, heat some oil over medium heat.
  3. Add the chopped onion, minced garlic, and grated ginger. Sauté until fragrant.
  4. Add the ground cumin, ground coriander, and turmeric powder. Stir well.
  5. Add the chopped carrots and red lentils. Stir to combine.
  6. Pour in the vegetable broth and bring to a boil.
  7. Reduce the heat and simmer for about 20 minutes or until the lentils and carrots are tender.
  8. Using an immersion blender, blend the soup until smooth and creamy.
  9. Stir in the coconut milk, lemon juice, salt, and black pepper. Simmer for another 5 minutes.
  10. Serve hot, garnished with fresh cilantro.
