Spiced Carrot and Lentil Soup

Heat oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

Add the carrots, lentils, cumin, coriander, and turmeric. Stir well to coat the vegetables and lentils with the spices.

Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the carrots and lentils are tender.

Remove from heat and let the soup cool slightly. Use an immersion blender or transfer the soup to a blender, and blend until smooth.

Return the soup to the pot and stir in the coconut milk, salt, and black pepper. Heat over medium-low heat until warmed through.

Serve the soup hot, garnished with fresh cilantro and a squeeze of lemon juice.
