  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle olive oil over the cut sides of the squash and season with salt and black pepper.
  3. Place the squash halves cut side down on a baking sheet and roast in the oven for 35-40 minutes, or until the flesh is tender and easily separates into strands with a fork.
  4. While the squash is roasting, thinly slice the shallots. Heat olive oil in a pan over medium heat and sauté the shallots until golden brown and caramelized.
  5. Once the squash is done, remove it from the oven and let it rest for a few minutes. Use a fork to scrape the flesh of the squash into strands.
  6. In a large bowl, combine the spaghetti squash strands with the caramelized shallots and maple syrup. Toss until well coated.
  7. Serve the spaghetti squash with a sprinkle of fresh parsley on top.
