  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplant, zucchini, red and yellow bell peppers, and onion into bite-sized pieces.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add the onion and garlic, sauté until fragrant.
  5. Add the sliced eggplant, zucchini, and bell peppers to the skillet. Cook until slightly tender.
  6. Stir in the diced tomatoes, cumin powder, chili powder, salt, and black pepper. Cook for another 5 minutes.
  7. Transfer the mixture to a baking dish and bake for 20 minutes.
  8. Remove from the oven and let it rest for 5 minutes.
  9. Sprinkle with fresh cilantro and drizzle with lime juice before serving.
