Chickpeas, also known as garbanzo beans, are one of the oldest cultivated crops and have been consumed for thousands of years. They are not only delicious but also packed with nutrients like protein, fiber, and vitamins.

This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

  1. Preheat the oven to 200°C (400°F).
  2. In a pan, sauté the chopped onion and minced garlic in olive oil until translucent.
  3. Add the curry powder, turmeric powder, cumin powder, coriander powder, salt, and black pepper. Cook for 2 minutes.
  4. Add the drained chickpeas and cook for another 5 minutes, mashing some of the chickpeas with a fork.
  5. Remove from heat and stir in lemon juice.
  6. Roll out the puff pastry sheets and cut into squares.
  7. Place a spoonful of the chickpea mixture onto each square.
  8. Fold the squares into rolls and seal the edges.
  9. Optional: Beat an egg and brush it on top of the rolls for a golden crust.
  10. Place the rolls on a baking sheet and bake for 20-25 minutes, or until golden brown.
  11. Allow the rolls to rest for 5 minutes before serving.
