  1. Heat olive oil in a large skillet over medium heat. Add sliced onion and minced garlic cloves, and sauté until softened.
  2. Add sliced mixed mushrooms and cook until they release their moisture and start to brown.
  3. Meanwhile, in a small bowl, whisk together vegetable broth, tamari sauce, cornstarch, water, salt, and black pepper.
  4. Push the mushrooms and onions to one side of the skillet and add seitan medallions. Cook until browned on both sides.
  5. Pour the broth mixture over the mushrooms, onions, and seitan. Stir well and bring to a simmer.
  6. Reduce heat to low, cover, and let simmer for 15 minutes, or until the gravy thickens.
  7. Serve the smothered seitan medallions with the mushroom gravy on top. Garnish with fresh parsley.
