  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, rolled oats, baking soda, salt, and mixed seeds.
  3. In a separate bowl, mix together the non-dairy milk, apple cider vinegar, maple syrup, and olive oil.
  4. Pour the wet ingredients into the dry ingredients and stir until a sticky dough forms.
  5. Transfer the dough onto a lightly floured surface and knead gently for a minute.
  6. Shape the dough into a round loaf and place it on the prepared baking sheet.
  7. Score a deep cross on top of the loaf using a sharp knife.
  8. Bake in the preheated oven for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  9. Remove from the oven and let it cool on a wire rack for at least 10 minutes before slicing.
  10. Serve warm or at room temperature.
