Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil and add the rinsed quinoa. Reduce heat, cover, and simmer for 15 minutes.

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent.

Add the bell pepper, zucchini, cherry tomatoes, and spinach to the skillet. Cook until the vegetables are tender.

Season with salt, black pepper, paprika, and cumin.

Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the vegetables. Mix well.

Drizzle lemon juice over the quinoa and vegetables.
