In a large mixing bowl, combine the whole wheat flour, all-purpose flour, rolled oats, flaxseeds, chia seeds, yeast, honey, and salt.

Add the olive oil and water to the dry ingredients. Mix well until a dough forms.

Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rest in a warm place for about 1 hour, or until doubled in size.

Preheat the oven to 375°F (190°C).

Punch down the dough to release the air. Divide the dough into 12 equal portions and shape each portion into a roll.

Place the rolls on a baking sheet lined with parchment paper. Cover with a kitchen towel and let them rise for another 15-20 minutes.

Bake the rolls in the preheated oven for 15-20 minutes, or until golden brown.
