Simple Mapo Tofu
Mapo Tofu is a popular Sichuan dish known for its spicy and numbing flavors. It is named after the pockmarked (ma) old lady (po) who allegedly created the dish.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 35 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Cut the tofu into small cubes.

Heat vegetable oil in a wok or pan over medium heat.

Add garlic, ginger, and Sichuan peppercorns. Stir-fry for 1-2 minutes until fragrant.

Add chili bean paste and doubanjiang. Stir-fry for another minute.

Add tofu cubes and gently stir to coat them with the sauce.

In a small bowl, mix soy sauce, sugar, cornstarch, and water. Pour the mixture into the wok.

Cook for 5-7 minutes until the sauce thickens and coats the tofu.

Add chopped green onions and salt. Stir well.

Remove from heat and let it rest for 5 minutes.

Serve hot with steamed rice.
