  • 250 gram Lotus Root
  • 200 gram Green Beans
  • 2 teaspoon Soy Sauce
  • 1 teaspoon Mirin
  • 1 teaspoon Sugar
  • 1 cup Vegetable Stock
  • 1 cup Water
  • 1 teaspoon Salt
Instructions
  1. Peel and slice the lotus root into thin rounds.
  2. Trim the ends of the green beans and cut them into bite-sized pieces.
  3. In a large pot, combine the soy sauce, mirin, sugar, vegetable stock, water, and salt. Bring to a boil.
  4. Add the lotus root and green beans to the pot. Reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.
  5. Remove from heat and let it rest for 5 minutes.
