Heat oil in a large pot over medium heat. Add onion, garlic, celery, and carrots. Saute until onion is translucent.

Add potatoes, turmeric powder, cumin powder, coriander powder, salt, and black pepper. Stir well.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes or until vegetables are tender.

Stir in coconut milk and simmer for another 5 minutes.

Remove from heat and let it rest for 10 minutes.

Serve hot, garnished with fresh cilantro.
