  1. Rinse the shirataki noodles under cold water, then boil them for 3-4 minutes. Drain and set aside.
  2. Heat vegetable oil in a large pan or wok over medium heat. Add minced garlic and sauté for 1 minute.
  3. Add sliced onion, carrot, and bell pepper to the pan. Stir-fry for 3-4 minutes until the vegetables are slightly softened.
  4. Add the cooked shirataki noodles to the pan and stir-fry for another 2-3 minutes.
  5. In a small bowl, mix together soy sauce, sesame oil, sugar, and salt. Pour the sauce over the noodles and vegetables, stirring well to combine.
  6. Add spinach to the pan and cook for 1-2 minutes until wilted.
  7. Sprinkle sesame seeds and chopped green onions over the dish.
  8. Remove from heat and let it rest for 10 minutes before serving.
  9. Serve hot and enjoy!
