Ingredients
  • 2 medium Zucchini
  • 2 medium Yellow squash
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 small Red onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Fresh thyme
  • 1 tablespoon Fresh basil
  • 1 tablespoon Fresh parsley
Instructions
  1. Preheat the grill to medium-high heat.
  2. Cut the zucchini, yellow squash, red bell pepper, and green bell pepper into thick slices.
  3. Thinly slice the red onion and mince the garlic cloves.
  4. In a large bowl, combine the sliced vegetables, minced garlic, olive oil, salt, black pepper, fresh thyme, fresh basil, and fresh parsley. Toss to coat the vegetables evenly.
  5. Tear off 4 large sheets of aluminum foil. Divide the vegetable mixture evenly among the foil sheets.
  6. Fold the foil over the vegetables to create a packet, sealing the edges tightly.
  7. Place the foil packets on the preheated grill and cook for 15-20 minutes, or until the vegetables are tender.
  8. Carefully remove the foil packets from the grill and let them rest for 5 minutes.
  9. Open the foil packets and serve the sensational foil-pack vegetables hot.
