Ingredients
  • 2 pound Sweet Potatoes
  • 4 tablespoon Butter
  • 1 cup Brown Sugar
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Pecans
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Wash and peel the sweet potatoes. Cut them into 1-inch thick slices.
  3. In a large baking dish, arrange the sweet potato slices.
  4. In a small saucepan, melt the butter over medium heat. Stir in the brown sugar, cinnamon, nutmeg, salt, and vanilla extract.
  5. Pour the butter mixture over the sweet potatoes, making sure to coat them evenly.
  6. Cover the baking dish with aluminum foil and bake for 30 minutes.
  7. Remove the foil and sprinkle the pecans over the top.
  8. Bake uncovered for an additional 15 minutes, or until the sweet potatoes are tender and the pecans are toasted.
  9. Let the dish rest for 10 minutes before serving.
