  2. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until onion is translucent.
  3. Add white beans, spinach, cherry tomatoes, fresh herbs, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Roll out the vegan pie crust and place it in a tart pan. Press it firmly against the bottom and sides.
  5. Pour the white bean mixture into the tart pan.
  6. Sprinkle vegan cheese on top.
  7. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is set.
