Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, celery, and garlic. Cook until vegetables are tender.

Add diced potato, mixed vegetables, tomato, bay leaf, thyme, salt, and black pepper. Stir well.

Pour vegetable broth into the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.

Remove bay leaf. Use an immersion blender to blend the soup until smooth.

Serve hot, garnished with fresh parsley.
