Carrots are an excellent source of beta-carotene, which is converted into vitamin A in the body and is essential for good vision.

Peel and cut the carrots into thick diagonal slices.

In a pot, bring water to a boil and add the carrots. Cook for 5 minutes or until slightly tender.

Drain the carrots and set aside.

In a large skillet, melt the butter over medium heat.

Add the brown sugar, honey, salt, and black pepper to the skillet. Stir until the sugar has dissolved.

Add the cooked carrots to the skillet and toss to coat them in the glaze.

Cook for 10-15 minutes, stirring occasionally, until the carrots are glazed and caramelized.

Remove from heat and let the carrots rest for 5 minutes before serving.
