Ingredients
  • 200 gram Runner beans
  • 150 gram Cherry tomatoes
  • 50 gram Red onion
  • 20 gram Fresh parsley
  • 2 teaspoon Dijon mustard
  • 2 tablespoon White wine vinegar
  • 4 tablespoon Extra virgin olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper
Instructions
  1. Bring a pot of salted water to a boil. Add the runner beans and blanch for 3-4 minutes until tender-crisp. Drain and rinse with cold water.
  2. In a large bowl, combine the blanched runner beans, cherry tomatoes, red onion, and fresh parsley.
  3. In a small bowl, whisk together the Dijon mustard, white wine vinegar, extra virgin olive oil, salt, and black pepper.
  4. Pour the vinaigrette over the runner bean mixture and toss to coat.
  5. Let the salad marinate for at least 10 minutes before serving.
