Ingredients
  • 500 gram Zucchini
  • 2 teaspoon Olive oil
  • 2 clove Garlic
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchini into 1/4-inch thick rounds.
  3. In a large bowl, combine the zucchini, olive oil, garlic, dried thyme, dried oregano, salt, and black pepper. Toss well to coat the zucchini.
  4. Spread the zucchini in a single layer on a baking sheet.
  5. Roast in the preheated oven for 15-20 minutes, or until the zucchini is tender and golden brown.
  6. Remove from the oven and let it rest for 5 minutes.
  7. Garnish with fresh parsley before serving.
