Cut the yellow squash into 1/4-inch thick slices.

In a large bowl, toss the squash slices with olive oil, salt, black pepper, and garlic powder.

Arrange the squash slices in a single layer on a baking sheet.

Roast in the preheated oven for 15-20 minutes, or until the squash is tender and lightly browned.

Sprinkle grated Parmesan cheese and fresh parsley over the roasted squash.
