Wash and peel the potatoes and carrots. Cut them into bite-sized pieces.

Trim the Brussels sprouts and cut them in half.

Peel and slice the red onion.

In a large bowl, toss the vegetables with olive oil, salt, black pepper, and thyme.

Spread the vegetables in a single layer on a baking sheet.
