Ingredients
  • 2 pound Winter Squash
  • 2 tablespoon Miso Paste
  • 2 tablespoon Maple Syrup
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sesame Oil
  • 2 clove Garlic
  • 1 teaspoon Ginger
  • 1 bunch Scallions
  • 1 tablespoon Toasted Sesame Seeds
Instructions
  1. Preheat the oven to 400°F (200°C). Cut the winter squash in half, remove the seeds, and cut into wedges.
  2. In a small bowl, whisk together miso paste, maple syrup, soy sauce, sesame oil, minced garlic, and grated ginger.
  3. Place the squash wedges on a baking sheet and brush the miso glaze over each wedge.
  4. Roast in the preheated oven for 30-35 minutes, or until the squash is tender and caramelized.
  5. While the squash is roasting, thinly slice the scallions.
  6. Remove the roasted squash from the oven and let it rest for 5 minutes.
  7. Garnish with sliced scallions and toasted sesame seeds.
  8. Serve hot and enjoy!
