  3. Chop the bell peppers, zucchini, and red onion into bite-sized pieces.
  4. Toss the chopped vegetables with olive oil, salt, and black pepper.
  5. Spread the vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly charred.
  6. In a large bowl, combine the cooked farro, roasted vegetables, cherry tomatoes, basil leaves, and Kalamata olives.
