  • 500 gram Pumpkin
  • 200 gram Mixed greens
  • 50 gram Red onion
  • 100 gram Feta cheese
  • 50 gram Pumpkin seeds
  • 2 teaspoon Olive oil
  • 1 teaspoon Balsamic vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 400°F (200°C). Cut the pumpkin into cubes.
  2. Toss the pumpkin cubes with olive oil, salt, and black pepper.
  3. Place the pumpkin cubes on a baking sheet and roast for 25-30 minutes, or until tender.
